Salmon Presto Pesto

Introduction

This is Mama Miche, and today, in my magic kitchen: Presto Pesto.

Pesto is easy. Like so easy. Anyone can do it! Like Chef Gusteau says in Ratatouille, "Anyone can cook!" That's not to say anyone can be a great gourmet chef. Not everyone has the magic touch of even the best home chefs. TLC is an ingredient. Period. Full stop if you don't get it, you don't get it, and your meals will always lack something. In cooking, you do need more than love, but it is what takes it over the top. Some skills are involved, but they develop over time with practice. 

I had an assistant back in the day when I was an executive in the music business in NY, and his girlfriend and I hung out a lot. She said she couldn't cook, and I told her that anyone can cook: if you can read, tell time, and measure with the correct tools, you can cook.

Pesto is made in a blender. Anyone can operate a blender. It is perfect over pasta and chicken, and my favorite salmon recipe is topped with pesto. Presto!

I season the salmon with our soon-to-be-released Memphis Mojo Rub™ and lemon pepper. A healthy meal really cannot be made any easier or more delicious! Presto Pesto!

Tools

  • Knife

  • Cutting board or mat

  • Measuring cups and spoons

  • Rubber spatula

  • Blender or food processor

  • Cooking sheet

Ingredients

Makes 2 servings

Salmon

  • 1 6- 8 oz piece per person  

  • 2 good glugs of avocado oil

  • 1 tsp lemon juice

  • 1 tbsp Memphis Mojo™

  • 1 tbsp lemon pepper

Pesto

  • 1 cup of arugula, spinach, basil (combined)

  • 1/2 tbsp Twice Stolen Spice™

  • 1 tbsp pine nuts (Note 1)

  • 1/4 cup shredded Parmesan cheese

  • 3 cloves fresh garlic

  • 1 tsp lemon juice

  • 1/4- 1/2 cup olive oil (Note 2)

Directions

Prep Time: 15 minutes Cook Time: 15 minutes

Prep

  • Preheat oven to 450° F

  • Pat fish dry.

  • Rub oil, lemon juice, and spices on fish and let sit while oven preheats

Pesto 

  • Mince garlic.

  • Grate cheese.

  • Combine all ingredients except the oil in the blender and blend until well combined.

  • Add oil slowly to achieve the desired consistency. Blend until smooth.

Cook

  • Cook prepared fish for 10-15 minutes, depending on thickness.

  • Remove salmon from the oven, and top with pesto.

Notes:

Enjoy with a fresh steamed vegetable like baby broccoli.
