Sweet Potato Kugel

Introduction

This is Mama Miche, and today in my magic kitchen: Sweet Potato Kugel

Aaah Kugel! There aren't that many foods that are more Jewish. As Jewish? Maybe. But not more. If you're not from a Jewish community or a community with no Jews, and they do exist, it's a foreign word and food. 

I grew up with the Momster making excellent potato, noodle, and matzo kugels, and that was it. That was enough. I learned of the existence of carrot kugel in Memphis, where there is a large Jewish community. Then the foodie in me went in search of more variations on the theme since I'll be cooking Seder dinners until one of the tiddly peeps takes over or I die. I've shared the cauliflower kugel, and now I share the sweet potato kugel. If you're one of those weirdos who does not like sweet potatoes, I'm not trying to convert you. Honestly, if you're an adult, at least take one bite. I could turn down the food only after I tried it when I was growing up. My mom would say, "How could you know you don't like it if you've never tried it?" When my kids were growing up, we called it the no thank you bite -take one, and then you can say no thank you. If you love sweet potatoes, you will love this recipe.

  • Large mixing bowls

  • Measuring cups and spoons

  • Food processor or grater

Ingredients

Makes 12 servings

  • 6 cups grated sweet potatoes

  • 2 cups grated apples

  • ¼ cup cornstarch or arrowroot powder (Note 1)

  • 1½ tsp. ground cinnamon

  • ¼ tsp. salt

  • 2 tbsp. maple syrup

  • 2 tbsp. olive oil

Prep Time: 60 minutes | Cook Time: 60 minutes

Prep

  • Preheat oven to 400° F.

  • Peel and cut sweet potato and apples. Grate into separate bowls. 

  • Once you have grated and measured the sweet potatoes, put them in a potato sack towel or a cheesecloth and wring out as much liquid as possible. Discard liquid

  • Then, place all the ingredients in a mixing bowl and mix by hand. It’s easier to properly distribute the spices with your hands than with a wooden spoon or spatula.

  • Grease a 7 X 10 baking dish with some butter and transfer the sweet potato mixture to the dish. 

  • Flatten out the potatoes so you have a nice, even top.

Cook

  • Place in the oven for 60 minutes or until the potatoes are fully cooked.

  • Remove from oven, cool slightly, slice and serve.

Notes:

  1. Add more if needed (if the mixture is too wet)

It's a great sweet Seder side, dessert & even breakfast!
