Marinated Vegetable Kebab à la Miche

Introduction

This is Mama Miche and today in My Magic Kitchen: Marinated Chicken Kebabs (Part 3 in my kebab series)

Chicken thighs. My oh my! These are some juicy and tasty thighs using the same base of compound butter/oil for marinating that we used on the lamb and the vegetables. I'm not gonna lie. This was an experiment gone terribly right. I made a large enough batch of the marinade base and kept it refrigerated. I wanted to try it for a bunch of different recipes to see how versatile it is and I'm impressed. The ingredients of the marinade tenderize meats and they melt in your mouth. It works on vegetables, fish and I'm sure it would flavor plant-based meat substitutes too. 

I think it takes all kinds to make the world go 'round. I've never been one to base my opinions off others' opinions or hearsay. I like to see for myself and learn for myself. I taught myself how to do a cartwheel, French braid hair, I even taught myself how to roll great joints. An inquisitive mind is a terrible thing to waste tho I'll admit it's gotten me in trouble a couple of times, I think it's better to learn the hard way than not at all. Most of Gen X is all out of fucks to give because of our upbringing. How quickly a lot of us had to grow up and parent ourselves and sometimes parent our parents might have something to do with it. But here in the year of the woke 2023, where the internet misinforms as much as it informs, it's a good thing. Too many fucks flying around are already messing the world up.

Tools

  • Knife

  • Cutting board or mat

  • Large mixing bowl

  • Large spoon

  • Measuring cups and spoons

  • Skewers

  • Baking sheet

Ingredients

Makes 6 servings

  • ½ cup seasoned butter (Note1)

  • ½ cup extra virgin olive oil

  • 2 lbs boneless, skinless chicken thighs (boobies if you prefer)

  • Vegetables (optional)

Directions

Prep Time: 10 minutes (8-24 hours to marinate) Cook Time: 15-20 minutes

Prep

  • Cut chicken thighs into quarters, or ½ square chunks

  • Add seasoned butter and oil into a bowl and mix well (Note 2)

  • Add chicken to the bowl and completely cover pieces with the marinade

  • Cover bowl tightly and refrigerate for at least 8 and up to 24 hours

  • Skewer with vegetables of your choice or just the chicken 

Cook

  • Spray cooking oil on grates

  • Preheat grill to medium heat

  • Grill approx. 15-20 minutes turning frequently to avoid burning

Notes

  1. You can find the recipe for the seasoned butter used in the marinade in my recipe for Lamb Kebabs

  2. For best results, warm the seasoned butter just enough to liquefy it so it mixes with the oil and covers the chicken evenly.
