Miche's viral Lasagna Soup

This is such an easy recipe to make. I'm not sure what makes a recipe go viral on TikTok. I wish I knew! Maybe then people would stick around for more than 40 seconds of the voiceovers I write and we'd have a thriving business. So, if you know the secret, please don't gatekeep. I'd love something we created to go viral. In a lasagna soup, not Covid, way.
We've been doing this soup series and I'm here for all the soups. I think I tend to like soups that are heartier. And this is one hearty soup. If you want to go meatless, I would load up on all the mushrooms and lentils, or one of those factory laboratory made meat substitutes if that floats your boat. If you're carnivore like me, the combination of Italian sausage, sweet or spicy, totally your preference, and some ground beef or turkey is perfection. The only thing I would do differently is put the lasagna noods in a bag to break them and then drop them into the soup. I almost took an eye out with the noodle shrapnel flying around. Always err on the side of caution when using sharp objects and cooking with heat.

Ingredients
Makes 8 servings
1 cup onion
1 cup bell pepper
6 garlic cloves
2 tbsp olive or avocado oil
1 lb. Italian sausage
1 lb. lean ground beef
2 (14.5 oz.) cans diced tomatoes, undrained
1 (28 oz.) can crushed tomatoes
1/4 cup tomato paste
6 cups beef broth (Note 1)
2 tbsp Twice Stolen Spice™
1/2 (9.0 oz.) pkg lasagna noodles (Note 2)
2 cups fresh spinach
2 tbsp fresh basil and/or parsley
Toppings
8 ounces (1 cup) ricotta cheese (stir some TSS in)
1/2 cup grated Parmesan cheese
1/2 cup mozzarella or provolone
Twice Stolen Spice™ to taste
Directions
Prep Time: 15 minutes Cook Time: 20-30 minutes
Prep
Small dice onion and bell pepper
Mince fresh garlic cloves
Chop spinach
Chop basil and parsley. Set aside for topping
Cook
Heat a large Dutch oven or large quart pan over medium-high heat. Add 1 tbsp of oil to the pot.
Brown beef and sausage, then drain. Set aside.
Add 1 tbsp oil to the pot. Add diced onion and cook until translucent.
Add diced bell pepper and minced garlic. Cook for another 5 minutes
Stir in the diced tomatoes, tomato sauce, tomato paste, beef broth, and Twice Stolen Spice™.
Bring to a boil, then stir in lasagna pieces.
Reduce heat to medium and cook for about 15 minutes or until noodles are tender.
Add spinach and cook until wilted and incorporated.
Serve
Top with ricotta, parm, mozzarella (or provolone), fresh basil or parsley, and another shake of Twice Stolen Spice™!
Notes:
Chicken or vegetable stock with beef bouillon can be substituted
You can use other pasta shapes - use approximately 2 ½ cups
