Ya Ya’s Sweet Potato Casserole

Introduction

This is Mama Miche, and today in My Magic Kitchen: YaYa’s Sweet Potato Casserole 

I don't know about anyone else, but holiday meals make me very nostalgic. Thanksgiving has always been a favorite of mine. Why? It's all my Momster’s fault. She made amazing Thanksgiving feasts. Totally a feast! Not your run of the mill dinner. And prepping for the Big Bird day are my earliest memories of helping her in the kitchen. She gave me big responsibilities. At least, that's how it felt. I made a chopped salad every year. That was my job. I assisted with everything but the salad was all mine to make. I took great pride in making it colorful and delicious.

My favorite side that was a staple at every Thanksgiving spread my Mom hosted was her sweet potato casserole. My daughter requested it so it was time to teach her to make it. There's a new chef in the house!

  • Knife

  • Spoon

Ingredients

Makes 12 servings

  • 1 cup crushed pineapple

  • ¼ cup unsalted butter, melted

  • Dash of salt

  • ¼ cup brown sugar

  • 1 egg, beaten (Note 1)

  • ½ teaspoon cinnamon

  • 2 cups mini marshmallows

Directions

Prep Time: 20 minutes Cook Time: 30 minutes

Prep

  • I put the taters in the microwave, which takes approximately 10-15 minutes.

  • You can also boil or bake them, but microwaving is the quickest and retains more nutrients from the skin.

  • Put into ice water, and the skin peels right off.

  • Mash the potatoes in a bowl.

  • Fold in the remaining ingredients.

  • Save a cup of the marshmallows to put on top.

Cook

  • 30 minutes at 400° with the top on and off for a few to crisp the marshmallow topping and serve.

Notes:

  1. Don't put the egg in until it cools unless you want scrambled eggs in your casserole.
