This is Mama Miche and today in My Magic Kitchen: Kitchen Sink Salad with Creamy Avocado Dressing!
The creamy avocado dressing is the star of any salad it tops. I love making it fresh and it’s perfect when you’re doing a fridge purge and need to use the avocados. We started keeping our avocados in water in the fridge and it’s the best hack to keep avocados fresh in the fridge for a month! I was constantly throwing out avocados and let’s face it, food is way too expensive to throw out. We all have some waste but we do our best to use what we buy and not waste food or money.
We eat our veggies up in here! I’ll eat just about any vegetable if it’s prepared in a tasty manner. The hubs isn’t a fan of mushrooms, eggplant, or raw tomatoes but he’s not averse to trying them although he has been known to pick around them when they’re on his plate. The kids? Well, he doesn’t like broccoli or asparagus and she’s definitely the pickiest with cooked vegetables but will eat most raw veggies. Their tastes are changing and we will continue to expand their horizons. You don’t know you don’t like something if you’ve never tried it. I encourage everyone to try new things.
A kitchen sink salad is what one makes when there is a fridge full of food about to turn or if you’re going out of town for a week or more and don’t want to come home to science experiments. So, everything but the kitchen sink goes in. I have been known to add leftover roasted vegetables, beans, brown rice, quinoa, and hummus. If you don’t want to chuck it, make it a salad!

Ingredients
Whatever you have in the refrigerator… use as much as you like!
I used:
Lettuce
Tomatoes
Cucumber
Zucchini
Sweet peppers
Cole slaw mix
Diced scallions
Radishes
Mozzarella balls
Sunflower seeds
Pumpkin seeds
Wisps
Twice Stolen Spice™
Avocado dressing
Makes 4 servings
1 Avocado, mashed
1 Tsp Lime juice
1 Tsp Scallion, finely diced
¼ Cup Oil, Avocado or Olive
¼ Cup Apple Cider Vinegar
1 Tsp Fresh Garlic, finely chopped
2 Tbsp Twice Stolen Spice™
Cold Water (until desired consistency)
Directions
Avocado Dressing
Prep Time: 5 minutes
Add sliced avocado to a mixing bowl and mash. Add lime juice and incorporate it into the avocado. Add scallions and oil and mix well to a creamy consistency. Add garlic and Twice Stolen Spice™ and continue mixing. Add cold water a little at a time until the mixture is at desired consistency. Promptly refrigerate until ready to use.
