Cheese Blintz Pancakes

This is Mama Miche, and today, in my magic kitchen: Cheese Blintz Pancakes
There are no easier pancakes than these to make, and you should always double this recipe. Always! It's so delicious and light and packs a little protein punch with the cottage cheese. It is a helluva lot less work than homemade blintzes and satisfies the taste buds that sometimes crave a cheese blintz. You know what I mean? It can't just be me. (Can it?) I love a good cheese blintz, and this recipe is a much healthier alternative made in minutes. Do not skip the lemon zest. Do not, I repeat, do not skip the lemon zest! Listen to me. You know, Mama knows best.

Blender/mixer (Note 1)
Griddle or pan
Spatula
Small mesh colander (Note 2)
Ingredients
Makes 4 servings
1/2 cup Flour
2 Eggs
1/4 cup Milk
1 1/2 tbsp sugar/ monk fruit
1/4 tsp Baking powder
1 cup Cottage cheese
1/4 tsp vanilla
Butter for cooking
Directions
Prep Time: 10 minutes Cook Time: 10-15 minutes
Prep
Mix the flour, eggs, milk, sugar, and baking powder in a blender on low until combined.
Add the cottage cheese and vanilla and blend until well combined. You want some texture but not chunks. This takes about 10 seconds on low.
Cook
Melt 1-2 tablespoons of butter in a pan or griddle over medium heat.
Once heated, drop 1/8 cup of batter onto the pan to form each pancake.
Cook for about 3 minutes (or until golden) and then flip and cook for another 1-2 minutes.
Do this in batches and repeat until you've used all the batter.
Top with lemon zest, powdered sugar, fresh fruit, compote, and syrup; the usual suspects! (Note 3)
Notes
If you don't have a blender, use a whisk and a mixing bowl.
A small mesh colander with a handle is a great hack to spread powdered sugar evenly.
Lemon zest and powdered sugar aren't mandatory but should be. Carry on.
