Introduction

This is Mama Miche, and today in my magic kitchen: corned beef (the Instant Pot way), and this is the way!

But first, here’s a bit from one of my favorite sitcoms, Mom, about corned beef…

Chef Rudy: What am I smelling? 

Christy: I made dinner. 

Chef Rudy: No, that can't be it. Do you have pets? 

Christy: It's corned beef and cabbage. 

Chef Rudy: Oh, yes, poor people food.

Roscoe: Are we poor people? 

Christy: Of course not. Now, eat your boiled meat.

I love corned beef. I really do. But I don't make it very often. It's easy to make but also quite time-consuming. That's why cooking it in the Instant Pot is my preferred method. You can set it and forget it! It's always perfect, and you can make it a one-pot meal if you cook your veggies in it as well. Makes clean up minimal, and we like that, too. 

If you've watched any of my videos, you know I love history, and I love storytelling, and that's what history is, so I often share the history of a food, but y'all don't seem to give a fuck, so if you're interested, do your own damn research. It's synonymous with St. Patrick's Day, but the best corned beef sandwiches can be found in an authentic Jewish deli. Or in my kitchen!

  • Instant Pot

  • Instant pot trivet 

  • Cutting board 

  • Knife

Ingredients

Makes 6 servings

  • 4 cloves garlic

  • 1 (12 oz) can or bottle of beer (Note 1)

  • 3lb (approx) corned beef brisket with spice packet

Directions

Prep Time: 15 minutes Cook Time: 120 minutes

Prep

  • Rinse the brisket thoroughly (unless you want a salt lick)

  • Place the trivet inside the Instant Pot.

Cook

  • Add garlic cloves & liquids to Instant Pot. 

  • Place brisket on the trivet and sprinkle spice packet on top.  

  • Close and lock the lid. Select high pressure according to the manufacturer's instructions; set the timer for 90 minutes. 

  • When the timer ends, let the Instant Pot do a natural release (it takes about 20 minutes)

  • Remove meat from Instant Pot and rest for 5-10 minutes before slicing.

**For a one-pot meal: (Note 2)

  • Add 2 cups of water to the remaining liquid in the Instant Pot

  • Turn Instant Pot to sauté function. 

  • Add the vegetables back in when your liquid is back to a boil.

  • Cook uncovered to desired tenderness.

Notes:

  1. If you do not wish to add beer, you can substitute beef broth and apple juice.

  2. Cabbage, potatoes, carrots, and onions can be added directly into the Instant Pot, OR you can roast the vegetables in the oven or air fryer.
