Green Bean Almondine
Introduction
This is Mama Miche, and today in My Magic Kitchen: Green Bean Almondine (with crispy shallots)
Thanksgiving traditions. Turns out, I do certain things because it's been a family tradition. For example, I do not love turkey, but every year, most years, I've roasted a turkey for Thanksgiving. When my in-laws were alive, we also had a turkey for Christmas Eve, which was way more than enough turkey for this girl. I roast a very good, tasty bird. It's never dry. Always delicious, and if you like turkey, it's phenomenal. Even if you don't, it doesn't suck.
Green beans. I don't know very many people, if any, that don't like green beans. I know many people who don't like broccoli, cauliflower, or squash but most like green beans. They are quite versatile vegetables, with so many ways to prepare them that are delicious and nutritious. This recipe is one of my favorites!
Try it, and let Mama Miche make your kitchen magic!

Large sauté pan
Ingredients
Makes 10 servings

2 lbs fresh French green beans (Note 3)
Directions
Prep Time: 15 minutes Cook Time: 20 minutes
Prep
Thinly slice shallots
wash beans and remove ends (if needed)
Cook
Cook beans on stove top for 8-10 minutes or place beans into a microwave-safe casserole dish with enough water to cover the bottom. Microwave on high power until almost tender, 8 to 10 minutes.
Drain in a colander and refresh under cold running water to keep the nice green color.
Heat a frying pan over medium heat.
Add the almonds and cook until just starting to turn golden, about 3 to 5 minutes, watching closely to prevent burning.
Take the pan off of heat and add butter to melt.
Return to heat and add garlic.
Mix in green beans, season with Twice Stolen Spice™, and stir until heated (about 3 to 5 minutes).
Crispy Shallots (Note 1)
Fry thinly sliced shallots in oil with Twice Stolen Spice™ and lightly crisp them in a warm oven or air fryer at 200º
Notes:
The crispy shallots are optional but should be done first if you're using them. After cooking them in oil in the same pan I'll cook the beans in, I put them in the air fryer on a low temp so they crip up while the rest of the dish is cooking.
Omit butter or substitute plant-based butter to keep vegan
You can use green beans of your preference. I use the French style for this recipe, but you can also use fresh, frozen, or canned.
