Prep Time: 5 minutes Cook Time: 15 minutes
In a large pot of boiling water, cook pasta to al dente according to package instructions. Drain and set aside.
While the pasta is cooking, heat a little olive oil in a large skillet. Add the onions and cook for 2-3 minutes, until soft. Then, add langostino and cook through for about 2-3 minutes.
Add the lobster bisque and cherry tomatoes. Stir, and cook until heated through.
Add your cooked pasta. Toss until the pasta is well-coated with the sauce.
Add in the Parmigiano-Reggiano cheese and stir. Serve right away, garnishing with fresh basil and more Parm, if needed. (note 3)
Notes
You can substitute frozen shrimp
The Langostino I got was from Aldi, not Trader Joe's
More cheese is always needed.
