Sweet Matzoh Brei
Introduction
This is Mama Miche, and today in my magic kitchen: Sweet Matzoh Brei.
This is the matzoh brie of my childhood. Very few ingredients, very easy to make, and very good use of matzo in a week where that's all you can eat. Joking, not joking. There is also a delicious savory matzoh brei recipe I've shared on our YouTube channel and website in which we use our delicious Twice Stolen Spice™ I learned that one from my dear friend, Essra Mohawk. I mention that in the voiceover. In the time between making that video and this one, Essra left this plane. She was a gifted and highly underrated singer-songwriter. When I was a child, I was a big fan of Schoolhouse Rocks, and she happens to be one of the singers. I loved that little tidbit about her, and I highly recommend you seek out and listen to her music and not just the songs Cyndi Lauper & Tina Turner recorded. I was renting a room from her in Nashville when she first made her savory matzoh brie for me. One of many memories made with her crazy ass. This matzo brie is my Momster's way. Both are delicious, and both were learned in the kitchens of great women. Try them both this Passover!

Ingredients
Makes approximately 4 servings
6 eggs
8 matzo
2 tbsp Butter
1 tbsp oil
¼ cup milk* optional
Dash salt and pepper
Toppings
Fruit preserves (compote or fresh) or syrup are perfect accompaniments
Directions
Prep Time: 10 minutes Cook Time: 10 minutes
Prep
Whisk eggs
Run each matzo under cold water and break into bowl with whisked eggs (I save 1 or 2 sheets and add just before pouring into fry pans)
Add a dash of salt and pepper
Cook
Add oil and butter to a skillet over medium heat.
Poor matzo egg mixture into pan and let set and mix until cooked through and to your desired crispiness.
