Chicken Wonton Cups

Introduction

This is Mama Miche, and today in my magic kitchen: Chicken Wonton Cups.

In New York, the joke is, "How do you get an actor's attention? Waiter." In Nashville, that's how you get a singer/songwriter's attention. Lucky me, I got to be a server in both cities. Yippee. The life of an artist, at least the struggling artist, is fraught with bullshit jobs needed to just pay the bills and hopefully have a minute to actually make art. The best gigs I had were catering jobs. Hard work, but always in a different setting and usually with like-minded people. 

My BFF, Lauri Day, ran an awesome catering company in Nashville. We have known each other for over 30 years, and this was back in the 90s, so we'd been buds for a long time. If she needed help or I needed the work, we had each other's backs. 

This recipe I'm sharing is one I got from her. I made a couple of changes, but the essential recipe is all Lars. It's the honey soy reduction that pulls this tasty morsel together. For large or intimate parties, this is a must-have! Try it, and you'll see!

Tools

  • Shredding claws or food processor 

  • Cutting board 

  • Muffin tin

  • Spoon

  • Measuring spoon & cups

  • Sauce bottle (nice to have)

Ingredients

Makes 18  servings

  • 36 wonton wrappers

Chicken salad

  • 2 lb cooked chicken (Note 1)

  • 1/2 cup broccoli slaw

  • 1/2 cup chopped scallions 

  • 1 tbsp sesame oil

  • 1 tbsp soy sauce (Note 2)

  • Salt & pepper to taste

  • Sesame seeds

  • Cilantro 

Honey soy reduction

  • 1/2 cup honey 

  • 1/2 cup soy sauce (Note 2)

  • 3 tsp wasabi

Directions

Prep Time: 20 minutes Cook Time: 10 minutes

Prep

  • Preheat oven to 350° F degrees.

  • Place wonton wrappers into an oiled mini muffin pan, gently pressing down and to the sides

  • Chop broccoli slaw

  • Slice scallions 

  • Shred cooked chicken

Cook

  • Bake wontons for 5 -10 minutes until lightly browned.

  • Remove wontons and let cool 

  • Stir broccoli slaw into chicken mixture; add 1/2 cup slaw, a little soy sauce, and sesame oil, and stir.

  • Using a small cookie scoop or spoon, place the filling into wonton cups and top with sesame seeds, scallion, and cilantro, drizzle honey soy reduction.

Honey soy reduction 

  • Combine honey, soy sauce, and wasabi in a saucepan; cook on medium until reduced and thickened, 15-20

Notes:

  1. Weight before cooking

  2. Substitute tamari or coconut aminos for soy sauce
