This is Mama Miche, and today in my Magic Kitchen: Unstuffed Pepper Casserole.

Ingredients
Makes 8 servings
2 tsp extra virgin olive oil
1 medium yellow onion, small diced
3-4 bell peppers, small diced
1 tsp Twice Stolen Spice™
1 pound ground turkey or beef (Note 1)
4 minced garlic cloves
2 tablespoons tomato paste
1 teaspoon smoked paprika powder
1 ½ cups beef stock
2 teaspoons Worcestershire sauce (see note)
3/4 cup long-grain white rice
3/4 cup shredded cheese of choice

Mince garlic
Cook
In a large (5—or 6-quart) pot or Dutch oven with a tight-fitting lid, heat 1 teaspoon of olive oil over medium-high heat. Add the onion and bell pepper, sprinkle with ¼ teaspoon Twice Stolen Spice™, and cook until just beginning to soften, about 3-4 minutes, stirring occasionally.
Add the turkey or beef, sprinkle with ¼ teaspoon Twice Stolen Spice™
Break up meat
Cook until browned, about 5 minutes, stirring occasionally.
Add the minced garlic, tomato paste, and smoked paprika. Cook another 1 minute, stirring constantly.
Add the stock and Worcestershire sauce, and bring to a rapid boil. Add the rice and the remaining ½ teaspoon of Twice Stolen Spice™.
Stir to combine.
Cover, reduce to a low simmer, and cook for about 15 minutes or until the rice is tender.
Remove the pot from the heat, fluff the rice, and sprinkle the top with cheese. Cover and allow to sit for 5-7 minutes or until the rice is perfect.
Sprinkle with chopped parsley and devour!
