Cheese Blintz Casserole

I was introduced to this masterpiece by my friend Wendy. We met in Memphis when our tiddlypeeps went to the same preschool. She's a doll, a living doll. And she doesn't gatekeep! Many years ago, when we both still lived in Memphis, she invited my family to her family's Yom Kippur Break Fast and served a lot of great food. This blintz casserole? I had never had it before! This dish is magnificent and perfect for breakfast, brunch, or brinner! It's one of those easy-to-make meals that will have everyone at the table asking you for the recipe. Tell them!

Large mixing bowl
Measuring cups and spoons
Whisk
13x9 baking dish
Foil-lined cookie sheet (Note 1)
Ingredients
Makes 12 servings
12 frozen cheese blintzes (2 pkg)
1/4 cup melted butter
6 eggs
1 (16 oz) container sour cream
1/4 cup sweetener of choice
1 tsp vanilla extract
1 pinch salt
Cinnamon for sprinkle
Directions
Prep Time: 5 minutes Cook Time: 50 minutes
Preheat oven to 350°
Melt butter in 2 qt baking pan (use 15 blintzes and add two eggs for 9 x 13)
In a bowl, beat eggs, sour cream, sweetener, vanilla and salt
Carefully place frozen blintzes in the pan
Pour mixture from bowl over blintzes
Sprinkle with cinnamon
Bake for 40-50 minutes
Top individual servings with homemade fruit compote, and wow!
Notes
This is optional but highly recommended to avoid making a mess in your oven!
