Matthew McConaughey’s Viral Tuna Salad

This is Mama Miche, and today, in my magic kitchen, Matthew McConaughey's Viral Tuna Salad.

Everyone is doing it! I've seen so many reels featuring folks making Matthew McConaughey's self-proclaimed "master of tuna salad" recipe. I'd been hankering for tuna salad, and his recipe sounded intriguing. Very different. It has both sweet ingredients and spicy, savory ingredients. I've always been basic in my tuna salad making. I usually use mayo, hard-boiled egg, onion, celery, Spike, and Twice Stolen Spice™. I've also made it the way my crazy Aunt Anne Ruckert did, with no mayo, lemon juice, Spike, olive oil & balsamic vinegar. Sounds pretty basic. Absolutely delish. Since I was going all in with this much more involved recipe, I went all in the Mama Miche way! Made my own jalapeno crisp and Italian dressing. To die for, by the way, I added some roasted chickpeas and a hard-boiled egg.

Why? 

Because I had to twist it my way to make your kitchen magic. MMMK! Let's eat.

Ingredients

Makes 4  servings

  • 1/2 cup mayonnaise, plus more as desired

  • 2 teaspoons white wine vinegar

  • 1 tablespoon lemon juice

  • 2 teaspoons wasabi paste

  • 2 teaspoons Italian dressing (Note 1)

  • 3 tablespoons finely chopped red onion

  • 3 tablespoons finely chopped dill pickle (or dill relish)

  • 1/3 cup crispy jalapeño chips (Note 2)

  • 1/4 cup chopped apple

  • 1/2 cup fresh corn kernels (Note 3)

  • 1/2 cup frozen peas (Note 4)

  • 10 ounces tuna packed in olive oil, drained (Note 5)

Mama Miche additions 

  • 1/4 cup roast chickpeas 

  • 1 hard-boiled egg diced

Directions

Prep Time: 15 minutes Cook Time: 0 minutes

  • Prep all your ingredients (dice, defrost, etc)

  • Combine ingredients in a large bowl

  • Serve immediately or refrigerate for the next day, which Matthew says is even better.
