This is Mama Miche, and today, in my magic kitchen: Lobster Tail Roll

Our outstanding offspring haven't quite developed a taste for the glorious crustacean (a secret win for us parents, if I'm honest!). So, when we spotted a tempting package of lobster tails at Costco, a mischievous plan started to form in my food-loving brain. We grilled the entire lot, knowing full well that a significant portion would be destined for something truly special. And that, my friends, is how my utterly delightful new over lobster roll adventure began.

The thought hit me even before the Costco cart reached the checkout. With those succulent leftover grilled lobster tails practically calling my name, the vision of a perfect lobster roll started to crystallize. Forget fancy sauces and complicated preparations – the simplest things are often the best. 

To transform that grilled lobster into pure handheld heaven, a few key ingredients were absolutely essential: creamy mayonnaise, a bit of finely chopped celery for a refreshing crunch and a subtle flavor, and since this kitchen witch resides in the glorious state of Maryland, you know a generous sprinkle of Old Bay was non-negotiable. But wait, there's more! My very own Twice Stolen Spice™ blend joined the party, adding its unique layer of deliciousness.

The result? Pure perfection. It was the kind of sandwich that makes you close your eyes and savor every morsel. Trust me on this one – even if you think lobster rolls are intimidating or overly fussy, give this simple approach a try. You just might surprise yourself (and your taste buds!).

  • Large chef knife 

  • Cutting board or mat

  • Measuring spoons

Ingredients

Makes 2 servings

  • 3 lobster tails 

  • 2 tablespoons mayonnaise

  • 1/4 cup finely diced celery stalks (1 rib)

  • 2 tablespoons finely minced chives (optional)

  • Lemon juice

  • 1 teaspoon Twice Stolen Spice™

  • 1 teaspoon Old Bay

  • 4 tablespoons unsalted butter

  • 2 top-split hot dog buns

  • 2 Tbsp. chopped fresh parsley

  • 2 Tbsp. finely grated Parmesan

Directions

Prep Time: 10 minutes Cook Time: 5 minutes

Prep

  • Cut meat into 1/2 to 1-inch bite-sized pieces and transfer to a large bowl.

  • Add mayonnaise, Twice Stolen Spice™, Old Bay, celery, and toss well to coat.

Cook

  • Melt 1 tablespoon of butter in a large skillet over medium-low heat. 

  • Add 2 buns with one cut side down. Cook, pressing on buns gently and moving them around the pan until golden brown. 

  • Remove from the pan, add another tablespoon of butter, and toast outside

  • Divide filling evenly

  • Garnish and devour

Notes

  1. It is not a traditional Maine or New England recipe that uses all the lobster meat, not just the tail.
