Sweet Potato Toast
This is Mama Miche and today in my magic kitchen: Sweet Potato Toast
I love sweet potatoes. I love them mashed, hashed, baked, and sweet potato fries are bomb dot com. Now, I present sweet potato toast! Yes, toast. I'm a big fan of sweet potatoes in all forms. That said, I am alone in the house. The tiddlypeeps will eat the sweet potato casserole at Thanksgiving, but that's about it. The hubster won’t even. So, did I make a whole sweet potato into several pieces of toast to do a flight just for myself? Yes, yes, I did and I wanna thank me for letting me be myself again. You should try this and pick your favorite topping. It'll be hard to do! It's low carb and delicious!

Ingredients
Makes 1-2 servings
1 large wide sweet potato
Spray oil
Dash Twice Stolen Spice™
Topping Ideas
Cream cheese with berries (and chia seeds)
Ricotta cheese with raspberries and mint
Peanut butter with honey and cinnamon (and banana slices)
Cottage cheese with tomatoes and everything seasoning
Fried egg with fresh chopped parsley, Twice Stolen Spice™
Avocado with lime juice,Twice Stolen Spice™
Whipped ricotta, pesto (and tomato)
Loaded bacon, chives (or scallions) and Greek yogurt
Directions
Prep Time: 10 minutes Cook Time: 16-30 minutes
Prep
Using a large sharp knife, cut off the bottom stem and place the sweet potato on a cutting board cut side down with the skin. Don't peel it.
Cut thin slices about 1/4″-1/3″ thick from the one end of the sweet potato to the other.
Spray sweet potato slices with cooking spray and season with Twice Stolen Spice™.
Cook
Toaster Instructions
Insert slices into toaster and toast them on high or in a toaster oven.
After the sweet potatoes pop up from the toaster, check to see if they are fork tender, and toast longer if desired. If toasting longer, turn down the toaster setting to medium.
Remove the sweet potatoes from the toaster and cool before adding toppings.
Oven Instructions
Preheat oven to 350℉. Place a wire rack on a large rimmed baking sheet.
Bake for 15-20 minutes, until potatoes are fork tender, but not soft.
Remove the sweet potatoes from the oven, and cool before adding toppings.
Air Fryer Instructions
Preheat air fryer to 400℉.
Air fry for 15 minutes, flipping once, until potatoes are fork tender, but not soft.
Remove the sweet potatoes from the air fryer and cool before adding toppings.
Notes
Storage: Store leftovers in an airtight container. Don’t store with the toppings; the sweet potatoes would get soggy. The sweet potato toast will last about 3-4 days in the fridge. Place it back in the toaster over or toaster for 1 minute to reheat.
Don’t overcook the sweet potatoes: You want them to be fork tender, but not softer so they hold their shape and can take the weight of the toppings.
