This is Mama Miche, and today in My Magic Kitchen: YaYa’s Sweet Potato Casserole 

Some dishes don’t just feed you—they carry you home. Yaya’s Sweet Potato Casserole is one of those recipes. Passed down through generations, it’s the kind of comfort that shows up at every holiday.

The ingredients may be simple, but the memories they create are anything but. This is the dish everyone asks for, the one that never has leftovers, and the one that makes your kitchen smell like belonging.

Ingredients

Makes 12 servings

  • 3-4 large sweet potatoes

  • 1 cup crushed pineapple

  • ¼ cup unsalted butter, melted

  • Dash of salt

  • ¼ cup brown sugar

  • 1 egg, beaten (Note 1)

  • ½ teaspoon cinnamon

  • 2 cups mini marshmallows

Directions

Prep Time: 20 minutes Cook Time: 30 minutes

Prep

  • I put the taters in the microwave, which takes approximately 10-15 minutes.

  • You can also boil or bake them, but microwaving is the quickest and retains more nutrients from the skin.

  • Put into ice water, and the skin peels right off.

  • Mash the potatoes in a bowl.

  • Fold in the remaining ingredients.

  • Save a cup of the marshmallows to put on top.

Cook

  • 30 minutes at 400° with the top on and off for a few to crisp the marshmallow topping and serve.

Notes:

  1. Don't put the egg in until it cools unless you want scrambled eggs in your casserole.
