This is Mama Miche, and today in my Magic Kitchen: Burnt Ham Ends

Burnt ham ends are what happens when patience meets flavor. Sticky, smoky, and caramelized at the edges, these bite-sized pieces turn an everyday ham into something crave-worthy. Slow-roasted until the sugars deepen and the outside chars just enough, each morsel delivers a balance of savory, sweet, and irresistible chew. Whether piled onto a platter for sharing or tucked into sandwiches, burnt ham ends prove that the best bites are often found at the edges.

Tools

  • Large chef knife 

  • Cutting board or mat

  • Measuring spoon & cups

  • Large mixing bowl

  • Large aluminum pan

  • Smoker

Ingredients

Makes 4-8  servings

  • 1-2 lbs smoked ham

  • 1 stick of unsalted butter 

  • 1 tbsp Memphis Mojo Rub™

  • 1 cup BBQ sauce

Directions

Prep Time: 20 minutes Cook Time: 2-3 hours

Prep

  • Cut smoked ham into small cubes

  • Cover with barbecue sauce and rub 

  • Mix well

  • Put in a foil pan

  • Add sliced butter to the top

Cook

  • Heat smoker to 275 Fº

  • Place the foil pan in the smoker

  • Smoke for two to three hours

  • Eat
