Yom Kippur is a day of fasting, reflection, and prayer, and when the fast is broken, tradition calls for foods that are both comforting and easy to prepare. This cheese blintz casserole is the perfect choice: simple, satisfying, and delicious. Using store-bought cheese blintzes, a custard of eggs, butter, and sour cream, it bakes into a golden, creamy dish that feels celebratory yet effortless. It’s a classic way to welcome family and friends back to the table after the fast—and it never fails to disappear quickly.

Tools

  • Large mixing bowl 

  • Measuring cups and spoons

  • Whisk 

  • 13x9 baking dish

  • Foil-lined cookie sheet (Note 1)

Ingredients

Makes 12  servings

  • 12 frozen cheese blintzes (2 pkg)

  • 1/4 cup melted butter 

  • 6 eggs

  • 1 (16 oz) container sour cream 

  • 1/4 cup sweetener of choice 

  • 1 tsp vanilla extract 

  • 1 pinch salt 

  • Cinnamon for sprinkle

Directions

Prep Time: 5 minutes Cook Time: 50 minutes

  • Preheat oven to 350°

  • Melt butter in 2 qt baking pan (use 15 blintzes and add two eggs for 9 x 13) 

  • In a bowl, beat eggs, sour cream, sweetener, vanilla and salt 

  • Carefully place frozen blintzes in the pan

  • Pour mixture from bowl over blintzes 

  • Sprinkle with cinnamon 

  • Bake for 40-50 minutes 

  • Top individual servings with homemade fruit compote, and wow!

Notes 

  1. This is optional but highly recommended to avoid making a mess in your oven!
