This is Mama Miche, and today in my Magic Kitchen: Salmon Croquettes 

I'm the Jew that does not love gefilte fish, especially from a jar. I've had homemade, which is slightly more palatable to my taste, but I would rather eat just about anything instead of what I call the hot dog of fish. I mention this because I usually substitute that course of the Seder dinner with salmon. There are many ways to prep it for holiday meals, and this is my new favorite way. It's a great gluten-free option any day of the week, but with Passover around the corner, I wanted to share this recipe with no flour, matzo meal, or dairy. Tools

  • Large chef knife 

  • Cutting board or mat

  • Measuring spoon & cups

  • Large sauté pan

  • Cuisinart 

Ingredients

Makes 12 servings

  • 1-12 ounce package of Nova Scotia lox 

  • 2 cans salmon 

  • 1 lemon

  • 1 bunch Scallions 

  • 1 bunch dill 

  • 1 cup (maybe more) Neutral oil for frying

Directions

Prep Time: 10 minutes Cook Time: 10 minutes

Prep

  • Put all the ingredients (except oil) in a Cuisinart and process until it's a paste consistency.

Cook

  • Heat oil

  • Make into patties or  football shape

  • Fry until golden brown on both sides and cooked on the inside

  • Serve with lemon slices, fresh dill, and horseradish sauce or tartar sauce (optional)
