This is Mama Miche, and today in my Magic Kitchen: Unstuffed Pepper Casserole.

There are times when you put in a lot of effort to make a delicious meal, and then there are times when you use a recipe like this. Simplified. Life and meal planning can be simple or complicated. Believe it or not, it's often your choice to do things the easy or the hard way. I learn life lessons the hard way. 

In my Magic kitchen, I will use any and all hacks to simplify. I've always loved a good stuffed pepper. My unstuffed pepper recipe hits all the notes and is done in no time. It's great for a quick weekday dinner. Who doesn't love a good quickie? Great anytime!

  • Cutting board or mat

  • Measuring spoon & cups

Ingredients

Makes 8  servings

  • 2 tsp extra virgin olive oil

  • 1 medium yellow onion, small diced

  • 3-4 bell peppers, small diced

  •  1 tsp Twice Stolen Spice™

  • 1 pound ground turkey or beef (Note 1)

  • 4 minced garlic cloves

  • 2 tablespoons tomato paste

  • 1 teaspoon smoked paprika powder

  • 1 ½ cups beef stock

  • 2 teaspoons Worcestershire sauce (see note)

  • 3/4 cup long-grain white rice

  • 3/4 cup shredded cheese of choice

Directions

Prep Time: 15 minutes Cook Time: 30-40 minutes

Prep

  • Dice pepper and onions

  • Mince garlic

Cook

  • In a large (5—or 6-quart) pot or Dutch oven with a tight-fitting lid, heat 1 teaspoon of olive oil over medium-high heat. Add the onion and bell pepper, sprinkle with ¼ teaspoon Twice Stolen Spice™, and cook until just beginning to soften, about 3-4 minutes, stirring occasionally.

  • Add the turkey or beef, sprinkle with ¼ teaspoon Twice Stolen Spice™

  • Break up meat

  • Cook until browned, about 5 minutes, stirring occasionally.

  • Add the minced garlic, tomato paste, and smoked paprika. Cook another 1 minute, stirring constantly.

  • Add the stock and Worcestershire sauce, and bring to a rapid boil. Add the rice and the remaining ½ teaspoon of Twice Stolen Spice™.

  • Stir to combine.

  • Cover, reduce to a low simmer, and cook for about 15 minutes or until the rice is tender.

  • Remove the pot from the heat, fluff the rice, and sprinkle the top with cheese. Cover and allow to sit for 5-7 minutes or until the rice is perfect.

  • Sprinkle with chopped parsley and devour!
