This is Mama Miche, and today, in my magic kitchen: Zucchini Kugel Muffins

Passover Seder is a festive celebration of freedom and a symbolic, ritualized meal commemorating the Israelites' liberation from slavery in ancient Egypt. We eat specific foods in a structured order of events, including retelling the Exodus story. Behind every single Jewish holiday is this simple mantra, "We fought. We won! Let's eat!"  if you know you know, that in a rush to leave Egypt, the Israelites could not wait for bread to rise so nothing leavened is eaten during the week-long commemoration.

The word "kugel" has German roots, meaning ball or sphere, but the dish is a traditional Ashkenazi Jewish dish, not German. Most well-known are noodle or potato kugel, which are commonly served on Shabbat and Jewish holidays. Here's a delicious zucchini kugel recipe for any day and Kosher for Passover. Make it!   • Large chef knife 

  • Cutting board or mat

  • Measuring spoon & cups

  • 12 cup mini muffin tin

Ingredients

Makes 12 servings

  • 2 large zucchini, grated and drained of excess liquid

  • 1 large onion, chopped

  • 1/4 cup almond flour

  • 1/4 cup matzo meal

  • ½ teaspoon baking powder

  • 1 teaspoon Twice Stolen Spice ™

  • 1/8 cup extra virgin olive oil

  • 1 large egg

Directions

Prep Time: 15 minutes Cook Time: 45 minutes

Prep

  • Preheat oven to 350℉.

  • Combine zucchini, onion, flour, baking powder, salt, olive oil, egg, and Twice Stolen Spice™.

  • Mix well. 

  • Grease a mini muffin pan with 12 cups. 

Cook

  • Divide the mixture between muffin cups

  • Put in the oven for 30-45 minutes until cooked through.  

  • Allow to cool before removing from the pan.
