This is Mama Miche, and today, in my magic kitchen: Heirloom Tomato Flight
This heirloom tomato flight was nothing short of a revelation—a testament to the magic that happens when simple, high-quality ingredients are treated with respect. Each tomato, vibrant and bursting with personality, offered its own sun-soaked note of sweetness, tang, or earthiness. Arranged side by side, they were a rainbow on the plate and a symphony on the tongue.
Even my hubster, who proudly wears the badge of “not a mater fan,” surprised us both. He tried it—and liked it! “Hey Mikey, he liked it!” (If you know, you know.) Not only did he give the tomatoes a chance, but he went in for seconds of the Kimchi egg salad AND he’s not an egg salad fan either!
Serve this as a light lunch, summer starter, or the centerpiece of a picnic board. Let the tomatoes shine, and don’t skimp on the quality tomatoes and toppings.

Ingredients
Makes 2-4 servings
2 (note 1) heirloom tomatoes, thickly sliced
Twice Stolen Spice™
CLASSIC BLTA
Mayonnaise
1 romaine lettuce leaf
2 slices of bacon cooked
2 slices of avocado
CAPRESE
1 slice fresh mozzarella
2-3 leaves fresh basil or pesto
Balsamic vinegar or reduction
GREEK
1 good spritz or two of olive oil
1/4 cup feta cheese
1/4 cucumber sliced
3 sliced kalamata olives (optional)
1 tbsp fresh dill
TURKEY CHILI CRUNCH
1 tbsp cream cheese
2 slices of turkey
1 tsp chili crunch oil.
TUNA SALAD (note 2)
Tuna
Mayo
Celery
Scallions
Lettuce
Romaine lettuce
KIMCHI EGG SALAD (note 3)
Hard-boiled egg
Kimchi
Gochugaru
Mayo
Scallions
TLC (tomato lox & cream cheese)
Cream cheese
Lox
Sliced onion
Dill
Capers (optional)
Everything but the bagel seasoning (optional)
Directions
Prep Time: 30 minutes
Wash and dry your tomatoes. Slice thickly (approx 0.25″) and sprinkle with Twice Stolen Spice™
Top each flight with the ingredients of each flavor combo.
Serve immediately and enjoy
Notes
The amount used will depend on their size and the number of tastes in your flight.
I mix all the ingredients (minus the lettuce) for the tuna salad in a bowl and spoon it on top of the tomato
I make the egg salad with hard-boiled egg, finely chopped kimchi, and Kewpie Mayo. Top with gochugaru, more kimchi, scallion and sesame seeds. (optional)
