This is Mama Miche, and today, in my magic kitchen: Pasta Chips

In the realm of culinary delights, a new star has emerged, captivating palates and sparking an obsession: Pasta Chips. Forget everything you thought you knew about pasta; this innovative creation transforms humble noodles into crispy, golden marvels that are nothing short of addictive.

The magic begins with perfectly cooked pasta, a generous drizzle of golden olive oil, the magical touch of Twice Stolen Spice™, and a flurry of freshly grated cheese. Pasta chips are not just a snack; they are an experience. They are the ultimate crowd-pleaser for any gathering, disappearing faster than you can say "more, please!" They're tailor-made for sharing – a communal delight that fosters connection and joy. Or, let's be real, for secretly devouring on your own, lost in a trance of pure culinary bliss, savoring every crispy, flavorful bite.

Ingredients

Makes 8  servings (note 2)

  • 8 oz. (1 package) pasta (rigatoni, farfalle, fusilli, ziti)

  • 1 tablespoon olive oil 

  • 1/4 cup grated Parmegiano regiano or Asiago cheese

  • 1-2 teaspoons Twice Stolen Spice™

  • Pesto or marinara for dipping

  • Preheat oven to 400°F

  • Combine spinach, feta cheese, flour,

    Cook

    • Cook the pasta according to the directions on the package.

    • Drain it and rinse in a colander. 

    • Place the pasta in a large bowl, and toss it with the olive oil, cheese, and Twice Stolen Spice™ until completely combined.

    • Preheat air fryer to 400˚F. 

    • Add the pasta to the air fryer basket. (In batches)

    • Cook for 7 to 10 minutes, until the pasta shapes are golden brown and crispy.

    • Shake the basket a couple of times to make sure they air-fry evenly. 

    • Remove the pasta chips and transfer to a serving plate or bowl.

    • Garnish with freshly grated cheese, and serve warm with the dipping sauces (optional)

Notes

  1. Use your oven if you don't have an air fryer (this recipe alone is a good enough reason to get one)

  2. With great restraint! It's easy to eat it all! Warning: Don't make a full box if you're alone and think, “I can save some for later.”

  3. If by some miracle, there are leftovers, place them in airtight containers or bags. Store at room temperature for 3 - 4 days.
